I hope you are all well and trying out some of the tasks I have been posting over the last number of weeks.I am not expecting you to do them all but I am expecting that you try your best and as I always say your best is all we ever want !!

Who ever thought carrots could taste so good…..Here is your list of ingredients and equipment you will need.You will practice many skills by making these delicious muffins…
once you have gathered all your ingredients you can start to make them.of course apron on and hands washed as usual !!sieve the flour into a large mixing bowlwash and peel the carrotscut the tops and bottoms off the carrotsusing the larger hole side of the grater,grate the carrots ,its a tricky job so be careful.grate the rind (outside) of the orange on the smaller hole side of grater,make sure you remove all the carrot and orange rind from the inside of the grater.add the cinnamon,baking powder and I added some raisins too,that’s just my choice!!add in the grated carrot and orange into the bowl.add in the brown sugarmix all the remaining ingredients gently togetherspoon out into the paper cases,making sure to have the same amount in each one ……as much as possible. Bake at 200 degrees for 20/25 minswhen cooked remove from the oven,allow to cool completely you can make some cream cheese icing using this light cheese. it has less fat content,which is a bit healthier!!put the cheese in a bowl and add a few teaspoons of icing sugar the icing should look like thisspread out with a bitter knife or the back of a spooncut the left over orange into thin slices and then into quarterspop the orange pieces on the top…and there you have them, you can freeze the without the icing ..but you probably wont need to !!!.
