I am a great fan of one pot dishes ,cuts down on the washing up.This one is very easy and tasty. you will be practicing your knife skills/using a vegetable peeler/using the hob and of course practicing your personal and kitchen hygiene.

CUT THE CHICKEN IN THIN STRIPS REMEMBER TO WASH YOUR HANDS AFTER
USING A VEGETABLE PEELER ,PEEL THE CARROTS AND CUT OFF THE TOP AND TAILS.
CUT THE CARROTS INTO LENGTHS ABOUT THE SIZE OF YOUR FINGER
PEEL THE GARLIC AND GINGER AND CHOP BOTH UP VERY SMALL.
PLACE THE CHICKEN ,GARLIC AND GINGER INTO A HOT PAN OR WOK. NO OIL NEEDED
ADD IN THE PREPARED CARROTS
CAREFULLY ADD IN THE SOY SAUCE AND THE HONEY
AFTER STIR FRYING FOR A FEW MINUETS ADD IN THE CASHEWNUTS
SERVE WITH RICE OR NOODLES

Remember you can add different vegetables to this dish or take them away depending on your likes and dis likes.I WOULD RECOMMEND NOT REPLACING ANY OF THE OTHER INGREDIENTS.

This is an ideal dish for a vegetarian by of course removing the chicken and add more cashew or pine nuts.

you can make the dish with BEEF also, using a good tender cut of meat as it is a quick method of cooking.

I hope you enjoy making this.Remember put it in your diary and write your comments,if the family liked it or not, what changes you might make next time.
